Made these Coffee and Walnut Mini Cakes a while back, so thought we should probably share the recipe! Coffee and Walnut is definitely one of our favourite flavours, and they're mini, so what's not to love? Super easy to make but look stunning, perfect for a celebration!
✿ Ingredients :
Sponge-
-150g butter -150g light muscovado sugar - 3 large eggs - tsp baking powder - 2 tbsp very strong espresso - 75g chopped walnuts
- Mini cake or muffin tin
Decoration and icing-
- 150g butter
- 450g icing sugar
-2tbsp milk
- 2tbsp very strong espresso
-200g chopped walnuts
- golden chocolate coffee beans
✿ Method:
1) Preheat the oven to 190 degrees Celsius and line and grease the tins 2) For the sponge beat the butter, sugar, eggs, flour, baking powder and espresso until smooth then fold in the walnuts 3) Spoon into the tins then bake for 12-15 mins or until ready 4) When cool slice the tops off the cakes so flat 5) For the icing beat the butter, icing sugar, milk, and espresso till smooth 6) Spread icing around the side of the cake before rolling the sides in the walnuts 7) Pipe the remaining icing on top and finish with the coffee beans!
