Easy Lemon Drizzle Cake

Hello Everyone!


With the weather being so lovely and warm at the moment, there's nothing I like more than a refreshing and light (but still super yummy) treat for those afternoons in the sun. One of my favourite recipes is this super quick (so make you can make the most of being outside!) and easy Lemon Drizzle Cakes!


Ingredients:


  • 3 eggs

  • 170g Self Raising Flour

  • 170g Caster Sugar

  • 170g Butter

  • 1 tsp Baking Powder

  • 110g Icing Sugar

  • 2 lemons


  • Scales

  • Mixing bowl

  • Spoon

  • Grater

  • Loaf/Cake tin

  • Measuring spoon (if you have one, otherwise a normal teaspoon will work perfectly)

  • Sharp knife or skewer


Method: 1) Measure out all ingredients and make sure you have all utensils to hand. 2) Mix together the eggs, flour, sugar, butter, baking powder and the zest of two lemons in a large bowl, using a whisk or a wooden spoon. (Do not throw away your lemons here as you will need the juice for your drizzle)

3) Add the mixture into a loaf or cake tin and bake in the oven at 180 degrees celsius, for about 30-45 mins, however this can depend on the size of your loaf and what your oven is like. The best way to test if your cake is cooked is to carefully slide a knife into the centre and if it comes out clean with no cake batter on then the cake is cooked!

4)Whilst the cake is baking, you can make your drizzle. This is made mixing the icing sugar and juice from the two lemons and should become a very runny consistency not at all like icing.

5) Using your sharp knife or skewer, poke small holes over the entire loaf (this is to insure the drizzle seeps into the sponge)

6) Drizzle your icing mixture over the loaf and leave to sink in for a few minutes.

7) Enjoy!
